Super Simple Summer Salad

There is nothing I love more on a hot summer day than cool, crisp slices of watermelon. So when one of my fellow cycle instructors shared this recipe for Lemon Basil Summer Salad, I couldn’t wait to try it---and now I’m hooked! It combines juicy watermelon pieces with cucumber slices, coconut, basil and lemon juice for a light, refreshing flavor. Super quick and easy to throw together--and it's really pretty too!
