Superfoods Make Super Treats!
As most people know, I have an insatiable sweet tooth and it does not discriminate. I will happily treat myself in anything from a gooey chocolate brownie, to a peanut butter cookie, to a pack of Starbursts. I used to be able to indulge without consequence thanks to an active lifestyle and a high metabolism. However, in the past couple of years, I've noticed that my body doesn't tolerate my weakness for all things things sweet. I get sluggish and sleepy, I don't recover from my workouts as quickly and, with my 49-year-old metabolism slowing down, it's become harder to justify my cravings--until I discovered Plantyful Sweets--a bakery and coffee shop located in Monte Vista that sells delicious gluten-free, plant-based homemade treats made with a variety of healing superfoods and other clean ingredients. The shop is currently closed (thanks COVID) but deliveries are available. I highly recommend the assorted treat box for a sampling of all of the super good, superfood sweetness. I caught up with owner and baker Gaby Borrego who shared her secrets for sweet success, as well as one of her favorite recipes. Enjoy!
When did you open Plantyful Sweets?
My brick and mortar opened up January 2020, but I started selling my treats at markets in late 2018.
How did you get started?
I started baking because after going vegan, it was difficult for me to find healthier, yet delicious tasting treats. I was very focused on my health and wellness, so I started experimenting. I would transform recipes by using less sugar, different flour alternatives, and even adding beneficial superfoods. Then I became so comfortable in the kitchen that I would make my own recipes, and my own ingredients, from scratch.
Why do you incorporate superfoods and what are some of the benefits?
I love using superfoods in my daily life to regain nutrients that most people normally don't get in a standard American diet. They can be as simple as milled flaxseeds, which are a great source of omega 3's and fiber. Or they can be as ancient as Maca, a root powder that can balance energy, stress, and hormonal balance. I love adding things like this to my treats because it's a fun way to get in those nutrients that we don't see very often. Other superfoods I use not only have nutritional benefits but also have functional benefits in baking, like natural colors (turmeric or spirulina) or binders (chia seeds).
Your treats are full of wonderfully healthy ingredients, but they should still be consumed in moderation, correct?
Yes, my treats are still treats. I believe sugar and oils should be used in moderation so I try to use less of those than traditional bakeries as well as cleaner, more beneficial substitutes. My average item is around 250 calories with 20g of sugar. I love making refined-sugar-free goodies and happily do so upon request.
What do you enjoy snacking on when you're not working?
I have been enjoying tons of fruit bowls at home. For a refreshing snack or light dessert, I like to blend a frozen banana with a date and cacao powder or peanut butter powder. Then I add crunchy toppings like cacao nibs or chopped almonds and it's like a light ice cream! I also been enjoy a mid-day matcha latte with cashew milk and just a small splash of agave.
